Ingredients:
10-12 whole unpeeled carrots
2 Tbsp. fresh thyme leaves (no stem)
2 Tbsp. Olive Oil
1 tsp. Kosher salt
1/4 tsp. ground black pepper
1 Tbsp. Honey (Optional)
Preparation:
- Preheat oven to 400 F
- Cut the carrots in half lengthwise
- Place carrots on a cooking sheet lined with foil
- Drizzle olive oil and honey over carrots
- Season with Kosher salt and black pepper
- Toss carrots until evenly coated with seasonings
- Arrange the carrots so that none are overlapping each other
