Ingredients:
5 Tbsp. Olive Oil
2 small Lemons (1 thinly sliced, 1 juiced)
4 cloves garlic, minced
1 tsp. Kosher salt (I used more)
1/2 tsp. Black Pepper
3/4 pound fresh Green Beans
8 small Red Potatoes, quartered
4 Chicken Breasts
What to do:
- Preheat oven to 450F
- Coat baking dish with 1 Tbsp. olive oil
- Arrange lemon slices from 1 lemon in a single layer in the bottom of dish
- In a large bowl, combine remaining oil-lemon juice from one lemon-garlic-salt & pepper
- Toss the green beans in the mixture to coat
- Remove with tongs and arrange them on top of the lemon slices
- Toss the potatoes in the mixture to coat
- Remove & arrange them on top of the green beans
9. Place chicken in the same bowl & coat
10. Arrange chicken on top of the vegetables
11. Pour any remaining olive oil mixture over the chicken
12. Bake for 50-55 minutes or until the vegetables are soft & tops of chicken are lightly browned
